Can we keep guest data in the UK?
Yes. UK or EU LLM regions are the default deployment, and the workflow can run inside your own cloud tenant, on a private GPU, or on-prem for kitchen-floor cases where connectivity is unreliable. The audit documents the data-residency boundary for each workflow so your operations director, FD and DPO see exactly where each input and each output sits.
Does this integrate with our existing PMS, EPOS, or booking platform?
The audit starts with a map of your existing stack (Mews, Opera, Cloudbeds, Little Hotelier, Lightspeed, Toast, Tevalis, Zonal, ResDiary, OpenTable, whatever combination you actually run, plus the systems not on that list), and the build sits on top of those systems through their published APIs or supported data exports. Where the integration is non-standard, the senior AI lead scopes the work specifically. We have shipped against custom OCR pipelines, IoT ingestion at scale, and email-native delivery flows on prior hospitality engagements.
What about liability when AI gets a demand forecast wrong?
Every model output ships with confidence scoring and a human-in-the-loop check; the rota or supplier order does not auto-execute on a low-confidence forecast. The contract includes clear IP and data-ownership clauses, the audit logs every model decision for inspection, and the engagement covers the governance paperwork an operations director needs to stand over the workflow with their board. Where the operator wants explicit indemnity language, we discuss it as part of the bespoke-build contract.
